The Summer of Pasta Salads!

I think the last few years have been dips & appetizers. This summer, for some reason and not even planned, I have been drawn to creating delicious pasta salads. And here is another for your viewing pleasure:

Greek Pasta Salad!!!

 Absolutely delicious. I made this guy for Kyle’s 4th of July BBQ and with each ingredient that was added to the bowl, the  more and more excited I got for the finished project.


2 boxes of pasta – I chose the swirly multi-colored because, well, I feel it is festive.

1 can of artichokes

1 can of chickpeas

1 can of black olives

1 green pepper, red pepper, small red onion, &  a handful or two of cherry tomatoes.

1 package of feta cheese


4 tablespoons of: olive oil, red wine vinegar & water

3 tablespoons of lemon juice

A generous sprinkle of oregano

4 crushed cloves of garlic

*I also added a few sprinkles of chili powder for a little kick. But that’s optional, not a necessity.

Then, cook the pasta, let it cool, make the dressing (put it to the side til the end), cut the veggies, & mix it all together. Voila! A beautiful salad that is surely a crowd pleaser 🙂
